Mighty Eats : Breakfast Bell Pepper Baked Eggs

Here's an easy low carb breakfast that needs very little prep. It's delicious, it's filling, and requires very little work. Sharing with you my recipe to make breakfast bell pepper baked eggs.

Ingredients
1 large bell pepper
2 eggs
1 tsp sea salt
1 tsp ground pepper
1 tsp sharp cheddar cheese or mozzarela

How to Make

Step 1

Pre-heat your oven at 180 C. During this time, cut your bell pepper in half lengthwise right down the middle. Take out the seeds and empty the cavity.

Step 2
Line your baking tray with parchment paper, and place your bell peppers with the open side up. Sprinkle a pinch of salt and pepper, and stick them in the oven. Bake for 20 minutes, or until your bell peppers are nice and soft. While waiting, grate your cheese. You can use cheddar or mozzarella. If you're feeling extra fun, you can use both!

Step 3
After 20 minutes of baking, take out your bell pepper halves, place grated cheddar at the bottom of each half. Adding a layer of cheese at the bottom makes sure that you get all that cheesy goodness in each bite when cooked.

Step 4
Crack an egg into the center of each pepper. Top them with more cheese, completely covering the egg and the entire top of the pepper. Add another round of salt and pepper, and stick it back into the oven for another 15 minutes. Keep cooking until the egg whites are set.

Step 5
Carefully take it out and serve with a side of your choice of vegetable (my choice is broccoli).
